  • 1 bunch green onions
  • 1 celery stick
  • 10 g basil fresh
  • 1 prig of thyme
  • 1/4 lime
  • 15 ml olive oil
  • salt
  • black pepper

Instructions

  1. Wash the potatoes well and bake in a preheated oven at 180 °C (356 °F) for 30 minutes or until done.
  2. Chop the green onions, mix with the juice from a quarter of a lime and the olive oil and season with salt and pepper. For the spice lovers, you can add chili or chili flakes.
  3. Remove the potatoes from the oven, mash them a little, add the cheese and then the green onion dressing. (You can also use other greens, depending on the season and what you have on hand.)
