Baked Oatmeal
Baked Oatmeal blends old fashioned oats with brown sugar, cinnamon, baking powder, milk, applesauce, butter, egg, vanilla, and raisins. The mixture is baked until set and golden, resulting in a warm, tender breakfast dish with cinnamon-spiced sweetness and soft oats. It’s ideal for make-ahead meals or a wholesome start to the day.
Ingredients
- 2 cups old fashioned oats
- 1/3 cup light brown sugar packed
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 1/2 cups milk any milk will work
- 1/2 cup applesauce unsweetened
- 2 tablespoons unsalted butter melted and slightly cooled
- 1 egg beaten, large
- 1 teaspoon vanilla extract
- 1/3 cup raisin or dried cranberries
Instructions
- Preheat oven to 350 degrees F. Grease an 8x8-inch baking dish with nonstick cooking spray and set aside.
- In a large bowl, combine the oats, brown sugar, cinnamon, baking powder, and salt.
- In a medium bowl, combine the milk, applesauce, melted butter, egg, and vanilla.
- Add the milk mixture to oat mixture; stir well. Stir in raisins or dried cranberries. Pour the oatmeal mixture into prepared pan and bake for 30 to 35 minutes or until oatmeal is set and golden brown.
Notes
- To double the recipe, use a 9x13-inch pan and double all ingredients.
- Replace raisins with fresh or frozen fruit or add nuts for extra texture and flavor.
- Store leftovers in the refrigerator for up to 7 days for easy reheating.
- Freeze baked oatmeal for up to 3 months to extend shelf life and for convenient future meals.
