Ingredients

  • 1 cup rolled oats I used gluten-free, old-fashioned
  • 1/2 cup walnuts divided, chopped
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 cup maple syrup real
  • 1 cup milk I used unsweetened almond milk
  • 1 egg lightly beaten, large
  • 1 Tablespoon coconut oil or butter, melted and cooled
  • 1 teaspoon vanilla
  • 2 banana sliced, ripe
  • 1 1/2 cups mixed berries frozen or fresh

Instructions

  1. Preheat oven to 375 degrees
  2. Lightly grease a 2-quart baking dish with cooking spray.
  3. In a medium bowl mix oats, baking powder, cinnamon, and half of the chopped walnuts. Stir to combine.
  4. In a sperate bowl, combine the syrup, milk, egg, coconut oil (or butter), and vanilla.
  5. Spread the bananas in a single layer over the bottom of the baking dish. Top with one cup of the berries. Sprinkle the dry oat mixture over the fruit. Pour the liquid ingredients evenly over the oats.
  6. Sprinkle the remaining walnuts and ½ cup of berries over the top. Bake for 35-40 minutes or until the top is browned and the oats have set. Let cool slightly before serving.
