Baked Peach Oatmeal

Rolled oats mixed with frozen peaches and baked into a cake like breakfast food.  This is a great meal for those weeks you prefer something sweet to have in the morning.

Ingredients

  • 2 cups oats
  • 1 ½ cups skim milk
  • 1 Tbsp honey
  • 2 scoops whey protein powder vanilla
  • 2 cups frozen peaches
  • 2 Tbsp butter or coconut oil
  • 1 tsp vanilla
  • 1 egg
  • 1 tsp baking powder
  • ½ tsp salt
  • cooking spray

Instructions

  1. Preheat your oven to 375°F.
  2. In a large bowl, mix together 2 cups of oats, 2 scoops of whey protein powder, 1 tsp baking powder, and ½ tsp of salt.
  3. In a separate bowl mix together 1 ½ cups of milk, 1 Tbsp honey, 1 Tbsp melted butter, 1 Tbsp melted coconut oil, 1 egg, and 1 tsp vanilla.
  4. Spray an 8”x8” baking dish with cooking spray and add the dry ingredients. Pour the wet ingredients over the top and mix to incorporate.
  5. Add in some of the peaches and hide them in the oatmeal. Place some of the peaches over the top for presentation purposes.
  6. Bake the oatmeal for 35 minutes or until it has set in the middle.
  7. This recipe makes 4 servings. Cut the oatmeal into 4 even pieces and place into each of your containers.
