Baked Peaches

Juicy Baked Peaches with oat crumble and vanilla ice cream makes the perfect healthier summer dessert.

Ingredients

  • 3 ripe peaches*
  • 2 Tablespoons all-purpose flour
  • 2 Tablespoons old-fashioned rolled oats
  • 2 Tablespoons light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 2 Tablespoons cold salted butter , cut into pieces
  • vanilla ice cream optional, for topping
  • Caramel sauce optional, for topping

Instructions

  1. Preheat oven to 375 degrees F.
  2. Oat Crumble Topping: In a small bowl mix flour, oats, brown sugar, cinnamon and butter. Add butter and cut in with a pastry blender or fork into very small pieces.
  3. Prep Peaches: Peel peaches, or keep the skin on. Slice in half and remove the pit. Place the peaches face-up in a small baking pan. 
  4. Assemble: Add a big spoonful of crumb topping to the center of each peach. 
  5. Bake for about 12-15 minutes or until crumb topping is golden brown. 
  6. Serve with a scoop of ice cream and/or a drizzle of caramel sauce, if desired.

Notes

  • Make Ahead Instructions: Make the crumb topping up to several days ahead of time. Homemade caramel sauce can be made weeks ahead, stored in the fridge. 
  • Peaches: try to buy freestone peaches, not clingstone, so the pit can be easily removed. Choose ripe peaches that have a slight give when you gently press on them.
