Ingredients

  • 2 large russet potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon paprika or garlic powder optional for added flavor

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper for easy cleanup.
  2. Wash and dry the potatoes. Slice them thinly, about 1/8-inch thick, using a mandoline slicer for uniformity.
  3. In a bowl, toss the potato slices with olive oil, salt, and pepper until evenly coated. Add optional spices if desired.
  4. Arrange the potato slices in a single layer on the prepared baking sheet, ensuring they do not overlap.
  5. Bake in the preheated oven for 15 to 20 minutes, or until the edges are golden brown and crispy. Halfway through, flip the chips for even baking.
  6. Remove the chips from the oven and let them cool on the baking sheet for 5 minutes. They will continue to crisp up.
