Ingredients

  • ½ cup panko breadcrumbs
  • ¼ cup freshly grated Parmesan cheese
  • 4 skinless boneless chicken breasts
  • ¼ cup mayonnaise
  • ¼ cup ranch dressing
  • 2 tablespoons fresh chopped parsley

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a shallow bowl, combine the panko breadcrumbs and freshly grated parmesan cheese. Mix well.
  3. Pat the chicken breasts dry with paper towels. In a separate bowl, mix together the mayonnaise and ranch dressing. Brush this mixture evenly over the chicken breasts.
  4. Press each chicken breast into the breadcrumb mixture, ensuring an even coating on all sides. Place the coated chicken breasts onto the prepared baking dish.
  5. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the coating is golden and crispy.
  6. Remove the chicken from the oven and let it rest for a few minutes. Sprinkle with fresh chopped parsley before serving.
