Ingredients

  • 2 cups cooked rice
  • 3 large eggs
  • 3 cups whole milk
  • 3/4 cup sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup raisins
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon cinnamon , plus more for garnish

Instructions

  1. Preheat oven to 325 degrees and grease an 8x8 baking dish.
  2. In a large bowl whisk together rice, eggs, milk, sugar, vanilla extract, salt, raisins, nutmeg and cinnamon until well combined.
  3. Pour into baking dish.
  4. Bake uncovered for 20 minutes, stir well and bake an additional 20 minutes.
