Baked Shrimp Scampi

Ingredients

  • 2 tablespoons white wine
  • 2 tablespoons lemon juice freshly squeezed
  • ½ cup panko breadcrumbs
  • ¼ cup butter melted, unsalted
  • 2 pounds Shrimp peeled and deveined, medium
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • ½ teaspoon red pepper flakes or more, to taste, crushed
  • salt to taste, Kosher salt and freshly ground
  • black pepper to taste, Kosher salt and freshly ground
  • 2 tablespoons parsley chopped fresh leaves

Instructions

  1. Preheat oven to 425 degrees F. Add white wine and lemon juice to a 9×13 baking dish; set aside.
  2. In a small bowl, combine Panko and butter; set aside.
  3. In a large bowl, combine shrimp, olive oil, garlic and red pepper flakes; season with salt and pepper, to taste.
  4. Add shrimp in a single layer to the prepared baking dish. Sprinkle with Panko mixture.
  5. Place into oven and bake until golden brown and bubbly, about 10-12 minutes.
  6. Serve immediately, garnished with parsley, if desired.

Notes

  • Panko breadcrumbs are Japanese-style and add a crisp texture; they are often found in the Asian foods section.
  • White wine can be substituted with chicken stock if a non-alcoholic option is preferred.
