Ingredients

  • 2 pounds sweet potatoes peeled
  • 2 tablespoons + 1 teaspoon olive oil
  • 1 tablespoons za'atar
  • ½ teaspoon kosher salt
  • ½ teaspoon garlic powder

Instructions

  1. Preheat oven to 425 degrees F. Line two large baking sheets with parchment paper.
  2. Cut potatoes lengthwise into slices that are ⅓-inch thick and then cut each slice into ⅓-inch thick strips. Dry the potatoes between two kitchen towels.
  3. In a large bowl, combine the potatoes, olive oil, za’atar and salt.
  4. Arrange the potatoes in a single layer potatoes on the two prepared baking sheets.
  5. Bake until the potatoes are golden brown, about 40 minutes, turning the potatoes every 10 minutes, and rotating the racks halfway through baking.
