Ingredients
- 6 medium sweet potatoes washed
- 2 tbsp olive oil
- 1 tbsp Flaky sea salt
For the whipped honey butter
- ¾ cup butter
- 3 tbsp honey
- pinch of salt
Instructions
- Preheat the oven to 200°C/400°F.
- While the oven is preheating place the sweet potatoes in a roasting dish then drizzle with olive oil. Season generously with salt and rub the oil and salt into the sweet potato skin.
- Place the sweet potatoes in the oven and bake for 45-60 minutes or until a sharp knife can easily be inserted.
- While the sweet potatoes are baking, whip softened butter with honey (or maple syrup) until light and fluffy. Season with salt and set aside.
- Once the potatoes are baked, remove from the oven and allow to rest for 5 minutes then make a long cut in the top of each sweet potato. Add a generous dollop of honey butter and serve.
