Ingredients
- 1 ½ Cups Italian Style Bread Crumbs
- 1 Pound whole wheat elbow macaroni
- 1 Cup full fat coconut milk
- 8 Ounces Vegan Shredded Cheddar Cheese
- 2 Teaspoons garlic minced
- 2 Teaspoons sea salt
- 2 Teaspoons freshly ground pepper
Instructions
- Preheat the oven to 350°F. Cook the pasta based on the directions included with the box then drain.
- In a saucepan, heat your coconut milk, garlic, salt, and pepper. Bring to a simmer and let cook for about a minute. This should take about 5 minutes total.
- Add about half the shredded cheese to the warm coconut milk mixture and stir until melted.
- In a large bowl, combine the pasta and cheese mixture and mix well.
- Pour the pasta mixture into a 3-3.5-quart casserole dish and spread even. Top with the rest of the vegan shredded cheese and bread crumbs.
- Bake for 15 minutes or until the cheese has fully melted on the top.
