Ingredients
Salad:
- 4 cups romaine lettuce shredded, or cobb lettuce
- 14 ounces chickpeas canned, rinsed and drained
- 14 oz grape tomatoes halved, or cherry tomatoes
- 3.5 oz reduced fat feta cheese
- 2 Hass avocados pitted and chopped
- 1 pinch salt to taste
- 1 pinch black pepper to taste
Dressing:
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
Instructions
- In a medium bowl, combine salad ingredients. Set aside.
- Whisk the dressing ingredients together in a serving jug.
- Pour the dressing over the salad; season with salt and pepper to taste. Serve.
