Ingredients

  • 2 pounds baby new potatoes , red, white, or yellow
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoons kosher salt
  • 1/2 teaspoon black pepper coarse ground
  • 1 tablespoon rosemary minced, fresh
  • 2 cloves garlic , minced

Instructions

  1. Preheat oven to 400 degrees.
  2. Halve the potatoes and place them into a large bowl.
  3. Add the olive oil, balsamic vinegar, salt, pepper, rosemary, and garlic to the bowl, mixing well.
  4. Place the potatoes on a sheet pan.
  5. Cook for 30 minutes, then flip potatoes and cook for 20 minutes.
  6. Remove from the oven and toss with a drizzle of extra olive oil or balsamic vinegar if desired.
