Balsamic Tomato Salad
Balsamic Tomato Salad features halved cherry or grape tomatoes tossed with fresh basil and a simple dressing of balsamic vinegar, olive oil, salt, and pepper. This no-cook salad highlights the bright, juicy sweetness of tomatoes balanced by the acidity of balsamic and the herbaceous note of basil, serving as a refreshing accompaniment or light starter. It can be served immediately or chilled.
Ingredients
- 2 pints tomatoes halved, cherry or grape
- 1/4 cup basil chopped, fresh
- 3 tablespoons balsamic vinegar
- 3 tablespoons extra virgin olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Cut all of your grape or cherry tomatoes in half and place into a large mixing bowl. Place basil in with tomato mixture.
- In a small mixing bowl, whisk together balsamic vinegar, olive oil, salt and pepper.
- Pour dressing over tomato mixture. Toss to coat.
- Serve at room temperature, or chill for 2 hours before serving.
