Banana Baked Oatmeal

This banana baked oatmeal is made with mashed bananas, rolled oats, and a few pantry staples. It's a quick and healthy breakfast to have in your back pocket.

Ingredients

  • 3 large bananas mashed
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 cups whole milk
  • 3 cups rolled oats
  • 1 tsp baking powder

Instructions

  1. Mash bananas in a large bowl. Add in brown sugar, vanilla extract, eggs and milk. Whisk until well combined.
  2. Add in rolled oats and baking powder. Stir to combine together.
  3. Line a 9 inch baking pan and pour oat mixture into the pan.
  4. Bake at 375°F for about 35 minutes.
