Banana Bread Baked Oatmeal
Banana Bread Baked Oatmeal mixes old fashioned oats with mashed bananas, almond milk, cinnamon, baking powder, and chopped walnuts before baking until golden. The baked oatmeal has a moist, tender crumb reminiscent of banana bread, suitable for breakfast or snack with a drizzle of maple syrup for added sweetness.
Ingredients
- 2 cups rolled oats old fashioned
- 1 teaspoon baking powder
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon sea salt fine-grain
- 2 cups almond milk unsweetened
- ¼ cup pure maple syrup plus more for serving
- 1 Tablespoon Flaxseed ground
- 2 Tablespoons coconut oil melted
- 2 teaspoons vanilla extract pure
- 4 medium banana 3 mashed (about 1 ¼ cup) and 1 sliced
- ½ cup walnuts chopped and divided

Instructions
- Preheat the oven to 375°F and spray an 8-inch square baking dish with cooking spray.
- In a large bowl, mix together the oats, baking powder, cinnamon, and salt.
- Add in the milk, maple syrup, flaxseed, coconut oil, vanilla, mashed bananas and walnuts. Stir well to combine.
- Carefully pour oatmeal mixture into the prepared baking dish and top with banana slices.
- Bake for 45 to 50 minutes, until the top is nicely golden. Remove from the oven and let cool for a few minutes. Portion and serve. Drizzle additional maple syrup on top, if desired and serve.
