  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon sea salt fine-grain
  • 2 cups almond milk unsweetened
  • ¼ cup pure maple syrup plus more for serving
  • 1 Tablespoon Flaxseed ground
  • 2 Tablespoons coconut oil melted
  • 2 teaspoons vanilla extract pure
  • 4 medium banana 3 mashed (about 1 ¼ cup) and 1 sliced
  • ½ cup walnuts chopped and divided

Instructions

  1. Preheat the oven to 375°F and spray an 8-inch square baking dish with cooking spray.
  2. In a large bowl, mix together the oats, baking powder, cinnamon, and salt.
  3. Add in the milk, maple syrup, flaxseed, coconut oil, vanilla, mashed bananas and walnuts. Stir well to combine.
  4. Carefully pour oatmeal mixture into the prepared baking dish and top with banana slices.
