Banana Bread Baked Oatmeal
Description
This Banana Bread Baked Oatmeal starts by combining oats with baking powder, cinnamon, and salt, giving the base a leavening lift and warm spice. Wet ingredients include almond milk, maple syrup, ground flaxseed, melted coconut oil, vanilla extract, mashed bananas, and chopped walnuts, which add moisture, sweet flavor, and texture. The mixture is poured into a greased baking dish and topped with banana slices for presentation.
Baked at 375°F until the surface is golden and set, the dish forms a soft yet slightly crisp texture similar to banana bread but with the heartiness of oatmeal. The walnuts contribute crunch and a nutty note, contrasting the tender baked oats and sweet banana flavor.
Served warm with extra maple syrup, this dish doubles as a comforting breakfast or snack that can be portioned easily. Cooling slightly before serving helps it set for clean slices.
