Ingredients

Banana Bread Bars:
  • 1/2 cup unsalted butter , softened
  • 1 1/2 cups sugar
  • 2 large eggs
  • 2 cups bananas , very ripe and mashed (about 3 bananas)
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup sour cream
Cream Cheese Frosting:
  • 4 ounces cream cheese , softened
  • 3 tablespoons unsalted butter , softened
  • 2 tablespoons sour cream
  • 2 teaspoons vanilla extract
  • 3 cups powdered sugar

Instructions

Banana Bread Bars:

  1. Preheat oven to 350 degrees and spray a 9x13-inch baking dish with baking spray or line with parchment paper.
  2. To your stand mixer add the butter and sugar and beat until light and fluffy, 2-3 minutes.
  3. Add in the eggs, bananas, and vanilla and beat until smooth.
  4. Sift together flour, baking soda, salt, and cinnamon.
  5. Add to the stand mixer on the lowest speed setting until just combined.
  6. Add in sour cream and beat until smooth.
  7. Pour into baking dish and spread evenly.
  8. Bake for 35-40 minutes or until a toothpick comes out clean.
  9. While the bars are cooling, make the frosting.
Cream Cheese Frosting:
  1. Add the cream cheese, butter, sour cream, and vanilla to a stand mixer and beat until light and fluffy.
  2. Add in the powdered sugar one cup at a time until smooth and incorporated.
