Banana Bread Bars

Banana bread bars are moist and flavorful and land somewhere between a cake and a bread with the most amazing brown butter frosting on top! Great for breakfast or an afternoon treat with a cup of coffee, both the texture and flavor are crave-worthy!

Ingredients

  • 1½ cups sugar
  • 1 cup sour cream
  • ½ cup butter softened
  • 2 eggs
  • 3-4 ripe bananas, mashed (about 2 cups)
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • ½ cup Chopped walnuts, optional
Brown Butter Frosting:
  • ½ cup butter
  • 4 cups powdered sugar
  • 1½ teaspoons vanilla extract
  • 3 tablespoons milk

  1. Preheat the oven to 375 degrees Fahrenheit. Grease and flour a 13 x 9 x 2-inch baking pan and set aside.
  2. In a large bowl, add the sugar, sour cream, butter, and eggs. Using an electric hand mixer, beat until creamy.
  3. Blend in the mashed bananas and vanilla extract.
  4. Add the flour, baking soda, and salt, and blend until incorporated. Stir in walnuts, if using.
  5. Spread the batter evenly into the prepared pan. Bake 20 to 25 minutes or until golden brown.
Brown Butter Frosting
  1. In a large saucepan, add the butter and heat over medium heat. Heat the butter until boiling. Allow the butter to simmer and heat into a delicate brown color. Remove from the heat immediately.
  2. Add the powdered sugar, vanilla extract, and milk. Whisk together until smooth.
  3. Spread the brown butter frosting over the warm bars and enjoy!
