Banana Bread Muffins
Banana Bread Muffins combine mashed ripe bananas, butter, sugar, and warm spices in a tender baked good that is moist and flavor-rich. The muffins bake until golden at the edges with a soft, just-set center. This recipe offers a convenient portioned alternative to traditional banana bread, perfect for breakfast or snacks.
Ingredients
- ⅓ cup butter gently melted and cooled to just slightly warm, unsalted
- 1½ cups banana you will need 3 to 4 large bananas to equal this amount, well-mashed; very ripe
- ¾ cup sugar
- 1 egg slightly beaten, large
- 1½ cups all-purpose flour
- ½ teaspoon kosher salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon cinnamon add more if you like!
Instructions
- Preheat oven to 375° F. Line a standard muffin tin with paper liners; set aside. If you don't want to use paper liners, lightly spray the muffin tin with non-stick spray.
- In a large bowl, stir together the mashed bananas, sugar, and egg. Then stir in the melted and cooled butter.
- In a medium bowl, whisk the flour, salt, baking soda, baking powder, and cinnamon. Add dry ingredients to the banana mixture and fold to incorporate.
- Divide batter evenly between the 12 muffin cups and bake for 18 to 20 minutes, or until nicely golden at the edges and just set in the center. Remove from oven and let cool for 2 minutes, then transfer individual muffins to a cooling rack to cool completely.
Notes
- You can bake the batter in a loaf pan (4" x 8") at 350°F for 45-50 minutes instead of muffins, adjusting baking time accordingly.
- If using a loaf pan, lightly spray the pan with non-stick spray and test doneness with a toothpick for a clean or nearly clean pull.
- Allow baked loaf or muffins to cool properly on a rack for best texture before serving or storing.
