Banana Bread Muffins
Description
Banana Bread Muffins are made by blending mashed ripe bananas with sugar, beaten egg, and slightly warm melted butter, creating a sweet and moist base. This wet mixture is combined with a flour mixture seasoned with salt, baking soda, baking powder, and cinnamon, which provides lift and spice to the texture and flavor.
Baking the batter in lined muffin tins at 375°F yields small breads with golden edges and a tender crumb that remains moist yet set in the center. The cinnamon adds a gentle warmth that complements the natural banana sweetness. This format allows for easy servings that can be enjoyed fresh or packed for on-the-go eating.
The muffin version of banana bread lets you enjoy the beloved flavors and texture of banana bread with quicker baking times and individually portioned servings. They can be made into a loaf as well by adjusting baking time and pan choice following the notes.
Ingredients
- ⅓ cup butter gently melted and cooled to just slightly warm, unsalted
- 1½ cups banana you will need 3 to 4 large bananas to equal this amount, well-mashed; very ripe
- ¾ cup sugar
- 1 egg slightly beaten, large
- 1½ cups all-purpose flour
- ½ teaspoon kosher salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon cinnamon add more if you like!
Instructions
- Preheat oven to 375° F. Line a standard muffin tin with paper liners; set aside. If you don't want to use paper liners, lightly spray the muffin tin with non-stick spray.
- In a large bowl, stir together the mashed bananas, sugar, and egg. Then stir in the melted and cooled butter.
- In a medium bowl, whisk the flour, salt, baking soda, baking powder, and cinnamon. Add dry ingredients to the banana mixture and fold to incorporate.
- Divide batter evenly between the 12 muffin cups and bake for 18 to 20 minutes, or until nicely golden at the edges and just set in the center. Remove from oven and let cool for 2 minutes, then transfer individual muffins to a cooling rack to cool completely.
Notes
- You can bake the batter in a loaf pan (4" x 8") at 350°F for 45-50 minutes instead of muffins, adjusting baking time accordingly.
- If using a loaf pan, lightly spray the pan with non-stick spray and test doneness with a toothpick for a clean or nearly clean pull.
- Allow baked loaf or muffins to cool properly on a rack for best texture before serving or storing.
