Banana Bread Muffins
Banana Bread Muffins are moist, individual quick breads made with mashed ripe bananas and chopped walnuts. They combine a balanced sweetness with a tender crumb, enhanced by cinnamon and vanilla for added warmth and aroma. These muffins are a convenient, handheld baked good suitable for snacks or breakfast.
Ingredients
- 1/2 cup sugar
- 1/2 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 3 banana mashed, ripe
- 1/2 cup walnuts , chopped
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
Instructions
- Preheat oven to 350 degrees and line muffin tin with cupcake liners.
- In a large bowl whisk together the sugar, oil, egg and vanilla extract until well combined.
- Add bananas and half of the walnuts.
- Add flour, baking soda, salt and cinnamon.
- Add to muffin pan and sprinkle the rest of the walnuts on top
- Bake for 20-25 minutes, until toothpick poked in center muffin comes out clean.
