Ingredients
- 1 ¾ cups whole wheat pastry flour (or all-purpose flour)
- ¼ cup flaxseed meal ((or additional flour))
- 4 teaspoons baking powder
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon salt
- 1 large banana (mashed)
- 2 cups milk (any kind)
- ½ cup plain, whole milk yogurt (or oil)
- 1 teaspoon vanilla
- banana slices, maple syrup and butter (optional, to serve)
Instructions
- Pre-heat waffle maker.
- In a medium bowl, whisk together dry ingredients: flour through salt; set aside.
- In a large bowl, mix together liquid ingredients: mashed banana through vanilla. Gently fold in the dry ingredients and mix to combine. If the mixture seems a little dry, add a little more milk or water.
- Pour batter into waffle iron and cook on medium-high heat for around 5-10 minutes. Serve warm or follow my instructions on How to Freeze and Reheat Pancakes and Waffles.
