Banana Bread Waffles with Cinnamon

Ingredients

  • 1 ¾ cups whole wheat pastry flour (or all-purpose flour)
  • ¼ cup flaxseed meal ((or additional flour))
  • 4 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • 1 large banana (mashed)
  • 2 cups milk (any kind)
  • ½ cup plain, whole milk yogurt (or oil)
  • 1 teaspoon vanilla
  • banana slices, maple syrup and butter (optional, to serve)

Instructions

  1. Pre-heat waffle maker.
  2. In a medium bowl, whisk together dry ingredients: flour through salt; set aside.
  3. In a large bowl, mix together liquid ingredients: mashed banana through vanilla. Gently fold in the dry ingredients and mix to combine. If the mixture seems a little dry, add a little more milk or water.
  4. Pour batter into waffle iron and cook on medium-high heat for around 5-10 minutes. Serve warm or follow my instructions on How to Freeze and Reheat Pancakes and Waffles.
