Banana Chia Pudding

Ingredients

  • 1 ripe banana mashed
  • 1 cup unsweetened almond milk or milk of choice
  • 3 Tablespoons chia seeds
  • 1-2 teaspoons maple syrup
  • ½ teaspoon vanilla extract
  • Pinch ground cinnamon

Instructions

  1. Stir together mashed banana, almond milk, chia seeds, maple syrup, vanilla and cinnamon in a mason jar. Let sit for 5 minutes then stir the mixture again to get out any clumps that may have formed. Place mixture in the fridge to set, at least 30 minutes but up to 12 hours.
  2. When ready to enjoy, top with chopped walnuts and fresh banana slices or toppings of choice.
