Banana Chocolate Chip Muffins

Ingredients

  • 1 ½ cups flour or gluten-free baking flour
  • ¼ cup cocoa powder
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ cup sugar
  • 1 egg or flax egg
  • ½ cup canola oil
  • ¼ cup whole milk or almond milk
  • 2 ripe bananas (the riper, the better)
  • 1 cup dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees. Line a muffin tin with large muffin liners.
  2. In a small bowl, sift together flour, cocoa powder, baking powder and baking soda.
  3. In a separate bowl, whisk together sugar and egg, until creamy. Add canola oil and milk and mix.
  4. Add dry ingredients into wet ingredients and fold with a spatula.
  5. In a small bowl, mash bananas then fold into muffin batter.
  6. Add chocolate chips and fold until well-incorporated.
  7. Fill lined muffin tin with about ½ cup of batter in each portion.
  8. Bake for 20-22 minutes.
  9. Serve and enjoy!

Notes

  • To make this recipe vegan: Substitute 1 flax egg (1 tbsp ground flaxseed + 2 tbsp water) for the egg. Substitute almond milk for the milk.
  • To make this recipe gluten-free: Use a gluten-free baking flour.
