Banana Chocolate Chip Muffins

Ingredients
- 1 ½ cups flour or gluten-free baking flour
- ¼ cup cocoa powder
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ cup sugar
- 1 egg or flax egg
- ½ cup canola oil
- ¼ cup whole milk or almond milk
- 2 ripe bananas (the riper, the better)
- 1 cup dark chocolate chips

Instructions
- Preheat oven to 350 degrees. Line a muffin tin with large muffin liners.
- In a small bowl, sift together flour, cocoa powder, baking powder and baking soda.
- In a separate bowl, whisk together sugar and egg, until creamy. Add canola oil and milk and mix.
- Add dry ingredients into wet ingredients and fold with a spatula.
- In a small bowl, mash bananas then fold into muffin batter.
- Add chocolate chips and fold until well-incorporated.
- Fill lined muffin tin with about ½ cup of batter in each portion.
- Bake for 20-22 minutes.
- Serve and enjoy!
Notes
- To make this recipe vegan: Substitute 1 flax egg (1 tbsp ground flaxseed + 2 tbsp water) for the egg. Substitute almond milk for the milk.
- To make this recipe gluten-free: Use a gluten-free baking flour.
