Ingredients

  • 3 ripe bananas , mashed (about 1 1/3 cups)
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 large egg
  • 1/3 cup unsalted butter , melted
  • 2 teaspoons vanilla extract
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup semisweet chocolate chips

Instructions

  1. Preheat oven to 375 degrees and line a muffin tin with muffin liners.
  2. In a large bowl whisk together bananas, sugar, brown sugar, egg, butter and vanilla extract until well blended.
  3. Sift together flour, baking soda, cinnamon and salt.
  4. Add the flour mixture and mini chocolate chips to the wet ingredients and whisk until just combined.
  5. Scoop batter into muffin tin.
  6. Bake for 18-20 minutes.
