  • 1/2 cup white whole wheat flour (60 grams)
  • 1 1/2 coops whey protein powder 48 grams, vanilla
  • 1/4 cup chocolate chips 56 grams, mini, semi-sweet
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • Pinch salt
  • 1/2 cup almond milk 4 oz, unsweetened vanilla
  • 1/2 cup banana 112 grams, mashed
  • 3 egg white
  • 1 egg
  • 1 tbsp butter 1/2 oz, unsalted, softened
  • 1/2 tsp vanilla extract

Instructions

  1. Pre-heat waffle iron to medium heat (I set mine to just below 4).
  2. Mix all dry ingredients, then add wet ingredients and stir until just combined.
  3. Spray waffle iron with non-stick cooking spray.  Pour 1/3 of waffle batter into waffle iron, flip waffle maker to other side and repeat.  Cook for about 4 minutes or until waffle is cooked through (my waffle maker beeps when it's done).  Repeat with final waffle.
  4. Serve waffles with whipped cream, maple syrup, sliced bananas, crushed peanuts, and more chocolate chips on top, if desired (additional toppings not included in nutrition info).
