Banana Chocolate Chip Protein Waffles

Ingredients

  • 1/2 cup white whole wheat flour (60 grams)
  • 1 1/2 coops vanilla whey (48 grams)
  • 1/4 cup mini semi-sweet chocolate chips (56 grams)
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • Pinch salt
  • 1/2 cup unsweetened vanilla almond milk (4 oz)
  • 1/2 cup mashed banana (112 grams)
  • 3 egg whites
  • 1 egg
  • 1 tbsp unsalted butter, softened (1/2 oz)
  • 1/2 tsp vanilla extract

Instructions

  1. Pre-heat waffle iron to medium heat (I set mine to just below 4).
  2. Mix all dry ingredients, then add wet ingredients and stir until just combined.
  3. Spray waffle iron with non-stick cooking spray.  Pour 1/3 of waffle batter into waffle iron, flip waffle maker to other side and repeat.  Cook for about 4 minutes or until waffle is cooked through (my waffle maker beeps when it's done).  Repeat with final waffle.
  4. Serve waffles with whipped cream, maple syrup, sliced bananas, crushed peanuts, and more chocolate chips on top, if desired (additional toppings not included in nutrition info).
