Ingredients
- 1 tbsp flax meal + 3 tbsp warm water
- 1/3 cup 70 g vegetable oil
- 3/4 cup 105 g brown sugar
- 3 medium-large bananas 275 g, well-mashed
- 1 tsp 4 g vanilla extract
- 1 tsp 3 g baking powder
- 1 tsp 6 g baking soda
- 1/2 tsp 2.5 g salt
- 2 tsp 4 g ground cinnamon
- 1 1/2 cup 210 g all-purpose flour
- 1/2 cup 100 g chocolate chunks
Instructions
- Preheat oven to 350F.
- In a large bowl, combine flax meal and water. Let stand until thickened.
- Add vegetable oil, sugar, mashed bananas and vanilla extract, and mix until incorporated.
- Sift in baking powder, baking soda, salt, cinnamon and flour. Stir until just combined. Fold in chocolate chunks.
- Divide batter between a lined muffin tin. Bake for 13-15 minutes until a toothpick or cake tester comes out clean when poked through the middle. The edges should be golden and top domed. Remove from tin within a few minutes and let cool on a wire rack.
