Ingredients

  • 250 ml / grams (8.82 ounces) milk
  • 1 large egg (about 60 grams, 2.11 ounces)
  • ½ cup (120 ml / grams, 4.23 ounces) maple syrup
  • 60 grams (2.12 ounces) butter melted and slightly cooled
  • 60 grams (2.12 ounces) banana mashed
  • 2 ½ cups (100 grams, 3.53 ounces) rice flakes
  • ½ teaspoon baking powder
  • Pinch of ground cinnamon
  • 1 teaspoon (5 grams, 0.18 ounces) vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 180°C (356°F). Grease and line a baking pan 17 cm x 17 cm (6.69 inches x 6.69 inches).
  2. Place all ingredients in a large bowl. Mix until well combined.
  3. Pour mixture into prepared baking pan. Flatten the top of the mixture by gently tapping the baking pan on your workspace or using the back of a spoon.
  4. Place in oven and bake for 25 to 30 minutes, or until the top becomes golden brown. Remove from oven and allow to cool slightly before serving.

Notes

  • Serve with fresh banana slices, sprinkling of ground cinnamon, fresh fruit, yogurt, nuts
