Banana Granola Streusel Muffins
Description
These muffins feature mashed bananas blended with melted butter, self-raising flour, baking powder, cinnamon, vanilla, sugar, maple syrup, Greek yogurt, eggs, and granola to create a thick batter. The batter is portioned into muffin liners, then topped with a cashew streusel mixture made from chopped cashews, flour, granola, maple syrup, and nutmeg. Baking them in a preheated oven at moderate temperature yields muffins that are moist inside with a crisp, flavorful topping.
The combination of natural banana sweetness, warm spices, and crunchy streusel gives these muffins appealing flavor and texture layers. They work well for breakfast or as a snack, providing both fruit and nut elements.
Ingredients
- 100 g butter melted and cooled, salted, 3.5oz
- 250 g self-raising flour
- 2 banana peeled and mashed, ripe
- 1 tsp baking powder
- 1.5 tsp ground cinnamon
- 1 tsp vanilla
- 70 g caster sugar 1/3 cup
- 2 tbsp maple syrup
- 150 g Greek yogurt 0.6 cup
- 2 egg beaten, large
- 1 granola large handful

- 100 g cashew 0.7 cup, roughly chopped
- 55 g flour 0.5 cup, sifted
- 150 g granola 1.5 cups
- 4 tbsp maple syrup
- ground nutmeg large pinch
Instructions
- Preheat the oven to fan assisted 160C / 180C / 350F / gas 4 and line a 12 cup muffin tray with paper cases or use a silicon muffin tray.
- Add all the ingredients from the melted butter thought to the eggs into a food processor and whiz until just combined.
- Then mix in the granola before equally dividing the batter into the muffin cups.
- Make the cashew streusel topping by mixing all the ingredients together in a bowl and diving the topping evenly over the muffins.
- Bake in the oven for 25-27 mins or until a skewer inserted into a muffin comes out clean.
