  • 100 g butter melted and cooled, salted, 3.5oz
  • 250 g self-raising flour
  • 2 banana peeled and mashed, ripe
  • 1 tsp baking powder
  • 1.5 tsp ground cinnamon
  • 1 tsp vanilla
  • 70 g caster sugar 1/3 cup
  • 2 tbsp maple syrup
  • 150 g Greek yogurt 0.6 cup
  • 2 egg beaten, large
  • 1 granola large handful

For the cashew streusel topping

  • 100 g cashew 0.7 cup, roughly chopped
  • 55 g flour 0.5 cup, sifted
  • 150 g granola 1.5 cups
  • 4 tbsp maple syrup
  • ground nutmeg large pinch

Instructions

  1. Preheat the oven to fan assisted 160C / 180C / 350F / gas 4 and line a 12 cup muffin tray with paper cases or use a silicon muffin tray.
  2. Add all the ingredients from the melted butter thought to the eggs into a food processor and whiz until just combined.
  3. Then mix in the granola before equally dividing the batter into the muffin cups.
  4. Make the cashew streusel topping by mixing all the ingredients together in a bowl and diving the topping evenly over the muffins.
  5. Bake in the oven for 25-27 mins or until a skewer inserted into a muffin comes out clean.
