Ingredients
- 3 medium bananas , very ripe - mashed (about 1 1/2 cups)
- 1/2 cup sugar
- 1/4 cup light brown sugar , packed
- 1/3 cup vegetable oil
- 1 large egg , lightly beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
Instructions
- Preheat oven to 375 degrees and line a muffin tin with muffin liners.
- In a large bowl whisk together the mashed bananas, sugar, brown sugar, oil, egg and vanilla extract until well combined.
- Sift together over the wet ingredients the flour, baking powder, baking soda, cinnamon, nutmeg and salt.
- Whisk together the dry and wet ingredients until just combined.
- Using a 1/4 cup measure scoop the batter into the muffin liners and bake for 20-22 minutes or until a toothpick comes out clean.
