Banana muffins with oat flour

Quick and easy to make wholesome muffin recipe. Vegan, glutenfree, and fatfree: perfect for a Medical Medium diet. Naturally sweetened with bananas and a touch of pure maple syrup, cinnamon and vanilla.

Ingredients

  • 1 cup banana = about 2 medium sized bananas
  • 1 cup oat flour gluten-free
  • 1 tbsp maple syrup
  • 2 teaspoons baking powder corn and aluminum free
  • 1 tsp vanilla powder or paste, or extract, Bourbon variety
  • 1 tsp cinnamon or pumpkin spice
  • sea salt to taste, Celtic variety

Instructions

  1. Preheat the oven to 360 F or 180C. Prepare 3 cupcake moulds or a tin.
  2. Mix the flour with the baking powder, cinnamon and vanilla. Add salt to tast, but try to keep as low as possible.
  3. Mash the bananas and add, together with a tablespoon of maple syrup.
  4. Fill three moulds and place in the oven for half an hour.

Notes

  • I prefer using both paper baking cups and a (ceramic) muffin tin and place the paper cups in the tin. This makes the cups stable when filling and easy to handle.
