Ingredients

  • ¾ cup butter softened
  • 1 pkg (8 oz) cream cheese softened
  • 2 cups organic or coconut sugar
  • 4 bananas
  • ½ teaspoon pure vanilla extract
  • 3 cups gluten free all purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups Chopped Pecans divided
Orange Glaze
  • zest of one half orange
  • juice of a half orange
  • ½ cup honey

Instructions

  1. In a large bowl cream with a mixer the butter, cream cheese and sugar until creamy and fluffy.
  2. Add eggs one at a time. Beat in bananas and vanilla.
  3. Combine the flour, baking powder, baking soda and salt, and add gradually to the creamy mixture. Fold in one cup pecans.
  4. Transfer to two greased 9-in. x 5-in. loaf pans. Sprinkle with remaining pecans.
  5. Bake at 350 F for 1 hour or until a toothpick inserted comes out clean.
  6. In a small bowl whisk together orange zest, juice and honey. Drizzle over loaves after cooling the loaves for 10 minutes. I like to double the orange glaze and drizzle some over each piece served.
