Banana Nutella Muffins

Ingredients
- 1 ⅓ cup all-purpose flour
- ½ teaspoon sea salt
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 1 ⅓ cup mashed ripe bananas 2 large or 3 medium
- ⅓ cup granulated sugar
- ¼ cup vegetable oil
- 2 large eggs room temperature
- 1 teaspoon vanilla rxtract
- ¾ cup Nutella
Instructions
- Preheat oven to 350F and line a standard sized 12-tin muffin tray with liners and coat in a non-stick spray.
- In a small bowl whisk together flour, salt, baking soda and baking powder and set aside.
- With a hand mixer, in a large bowl mix together mashed bananas and sugar.
- Add in oil, eggs, vanilla, and mix well on medium until the oil is fully blended.
- Pour in whisked ingredients, mixing again just until fully incorporated.
- Fill the muffin cavity with 3 tablespoons of batter, then drop in 1 tablespoon of Nutella into the center and then add an additional tablespoon scoop of batter on top. (Note: if you prefer to set aside 12 tablespoons of batter first, then evenly divide the batter among the 12 muffin cavities before starting.)
- Bake at 350F for 18-20 minutes or until the tops start to turn golden brown.
- Allow to cool on a cookie sheet slightly before removing from tray.

- The Best Bananas. Use ripe bananas with brown spots on their peel. These over-ripe bananas will make a sweeter muffin with more intense banana flavor.
- Muffins Are Done. Insert a toothpick into the center of the muffin to check for doneness. If it comes out clean or with minimal crumbs, the muffins are finished.
- No-Mess. Spray your measuring cup before filling it with Nutella. It will slide right out and make less mess.
- Muffin Liners Are Best. Use paper liners or generously grease the entire muffin pan to ensure that your muffins release easily when done baking.
- Don't Over Mix. Be careful not to over mix your batter or your muffins will become dense.
