  • 1 ⅓ cup all-purpose flour
  • ½ teaspoon sea salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 ⅓ cup mashed ripe bananas 2 large or 3 medium
  • cup granulated sugar
  • ¼ cup vegetable oil
  • 2 large eggs room temperature
  • 1 teaspoon vanilla rxtract
  • ¾ cup Nutella

Instructions

  1. Preheat oven to 350F and line a standard sized 12-tin muffin tray with liners and coat in a non-stick spray.
  2. In a small bowl whisk together flour, salt, baking soda and baking powder and set aside.
  3. With a hand mixer, in a large bowl mix together mashed bananas and sugar.
  4. Add in oil, eggs, vanilla, and mix well on medium until the oil is fully blended.
  5. Pour in whisked ingredients, mixing again just until fully incorporated.
  6. Fill the muffin cavity with 3 tablespoons of batter, then drop in 1 tablespoon of Nutella into the center and then add an additional tablespoon scoop of batter on top. (Note: if you prefer to set aside 12 tablespoons of batter first, then evenly divide the batter among the 12 muffin cavities before starting.)
  7. Bake at 350F for 18-20 minutes or until the tops start to turn golden brown.
  8. Allow to cool on a cookie sheet slightly before removing from tray.

  • The Best Bananas. Use ripe bananas with brown spots on their peel. These over-ripe bananas will make a sweeter muffin with more intense banana flavor.
  • Muffins Are Done. Insert a toothpick into the center of the muffin to check for doneness. If it comes out clean or with minimal crumbs, the muffins are finished.
  • No-Mess. Spray your measuring cup before filling it with Nutella. It will slide right out and make less mess.
  • Muffin Liners Are Best. Use paper liners or generously grease the entire muffin pan to ensure that your muffins release easily when done baking.
  • Don't Over Mix. Be careful not to over mix your batter or your muffins will become dense.
