These Banana Oatmeal Bars are one of the simplest recipes ever. They have no flour and no eggs and can be easily made gluten free and vegan as well.

Ingredients
- 2 ¼ cups oats
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- 3 ripe bananas the riper the better
- ¼ cup unsweetened applesauce
- ¼ cup honey or agave nectar
- 2 teaspoon pure vanilla extract
- ½ cup chocolate chips
For chocolate drizzle:
- 2 tablespoon chocolate chips
- ½ teaspoon coconut oil
Instructions
- Preheat oven to 350 degrees F. Spray 9x9 inch baking pan with nonstick cooking spray.
- To make oat flour - Simply put the oats into a food processor or food processor and blend for 1-2 minutes, stopping to stir a few times. You want it to have the consistency of flour.
- Pour the oat flour into a medium bowl and add the baking soda, baking powder, baking soda, cinnamon and salt.
- Put the bananas, applesauce, honey and vanilla extract into the food processor or blender and blend for 1-2 minutes or until blended nice and smooth.
- Add this to the oat flour and stir to combine.
- Add in the ½ cup of chocolate chips and stir gently to blend in.
- Pour batter into greased pan (I just use a little coconut oil) and spread evenly.
- Bake for 15 minutes or until toothpick or knife comes out clean
- Cool 10-15 minutes on wire rack.
- <strong>To make the drizzle</strong> - put 2 tablespoon of chocolate chips and coconut oil in the microwave. Microwave on high 30 seconds
- Stir well to combine
- Drizzle over top of the bars.
- Cut into 16 squares.
- ENJOY!
- Store in an air tight container. Freezes well.
