Banana Walnut Bars (Vegan)

Tender banana snack bar with a vegan caramel sauce baked in the center of the bars. These are a delicious cross between blondie bars and cake.

Ingredients

  • 1/2 cup coconut oil
  • 1/2 cup brown sugar or coconut sugar
  • 3 banana small, medium, mashed, ripe
  • 1 teaspoon baking powder
  • 1 teaspoon white vinegar
  • 1/2 cup walnuts chopped
  • 1 1/2 cups flour
  • 1/2 teaspoon vanilla extract
  • caramel sauce
  • confectioners sugar
Vegan Caramel Sauce
  • 7 Tablespoons coconut sugar or brown sugar
  • 7 Tablespoons water cold
  • 4 ounces coconut milk
  • 1/4 teaspoon vanilla extract

Instructions

Vegan Caramel Sauce
    Cup of Yum
  1. In a small saucepan add coconut sugar and water and heat over medium. Stir until the sugar dissolves.
  2. Continue to heat until the ingredients start to bubble. Simmer for 2-3 minutes.
  3. Add coconut milk and reduce heat to a simmer. Simmer for 10-15 minutes.
  4. Remove from heat and stir in vanilla extract.
  5. Cool.
Blondie Walnut Bars
  1. Preheat oven to 350°F
  2. Line a 8"x8" baking pan with parchment paper.
  3. In a large mixing bowl beat coconut oil and sugar with a hand mixer until light and fluffy.
  4. Add mashed bananas.
  5. In a small cup or mini bowl combine baking powder and vinegar until well combined.
  6. Add baking power and vinegar mix to banana mixture.
  7. Stir in vanilla extract.
  8. Add flour and mix all ingredient together.
To Assemble
  1. Pour half of the batter into prepared baking pan.
  2. Top with prepared caramel sauce.
  3. Add the additional batter.
  4. Sprinkle with confectioner's sugar and bake for 10 minutes.
  5. Remove from oven and add additional confectioner's sugar (generous amount).
  6. Bake for an additional 20-25 minutes or until a toothpick placed in the blondie portion of the bars come out clean.
  7. Cool before cutting.

Notes

  • Caramel sauce can be stored in the refrigerator for up to two weeks.
