Bangin Good Shrimp

Bangin Good Shrimp features large shrimp quickly sautéed with cornstarch for a light coating, then tossed in a tangy, creamy sauce of mayonnaise, Thai sweet chili sauce, and sriracha. The shrimp are served atop shredded lettuce and cabbage, garnished with scallions for freshness and crunch, creating a contrast of textures and flavors.

Ingredients

  • 5 tbsp mayonnaise light
  • 1 lb Shrimp shelled and deveined (weight after peeled, large
  • 3 tbsp Thai sweet chili sauce
  • 2 tsp cornstarch
  • 1 tsp sriracha (to taste)
  • 1 tsp canola oil
  • 3 cups iceberg lettuce or butter lettuce, shredded
  • 1 cup purple cabbage shredded
  • 4 tbsp scallions (chopped)

Instructions

  1. In a medium bowl, combine mayonnaise, Thai sweet chili sauce and Sriracha. Set aside.
  2. Combine lettuce and cabbage and divide between four plates. Set aside.
  3. Coat shrimp with cornstarch, mixing well with your hands.
  4. Heat a large skillet or wok on high heat, when hot add oil. When oil is hot add the shrimp to hot pan and cook tossing a few times until cooked through, about 3 minutes.
  5. Remove from pan and combine with the sauce coating well.
  6. Place shrimp on lettuce and top with scallions.
