Bánh Bò

Bánh bò is a kind of steamed sponge cake, made from rice flour that is originally from southern China and is popular in Vietnam.

Ingredients

  • 4 cups rice flour
  • 4 teaspoons tapioca (cassava flour)
  • 1½ cup coconut milk
  • 1 tablespoon active dry yeast
  • ⅔ cup sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 cups warm water (at 95F/36C)
  • 3 food colorings (example: yellow, pink, water green)

Instructions

  1. In a bowl, whisk vigorously all the ingredients except the food coloring until smooth.
  2. Cover and let the dough sit for 3 hours in a warm, draft-free place.
  3. After 3 hours, air bubbles will form on the surface of the dough.
  4. Mix the dough and divide it into 3 equal portions.
  5. Then add the food coloring to each portion. Mix well.
  6. Grease a small muffin pan.
  7. Pour the dough in ¾ of each mold, so that there is room for the dough to rise.
  8. Place the pan (or individual molds) in a large steamer with boiling steam.
  9. Cover and steam for 10 minutes over medium heat or until an inserted toothpick comes out clean.
