Banh Hoi Platter
The Banh Hoi Platter brings together delicate woven rice noodles, roasted pork, steamed pork roll, and fried spring rolls served with fresh herbs, pickled vegetables, cucumber, and dipping sauce. The noodles have a soft, light texture and are rolled into bundles, while the meats provide savory richness. Fresh herbs and do chua add brightness and crunchy textures, and the green onion oil adds aromatic depth when drizzled.
Ingredients
- 1 pkg banh hoi Vietnamese woven rice noodles
- few tablespoon green onion oil optional, or shallot oil
- 1 lb pork roasted
- 1 pkg Chả Lụa Vietnamese steamed pork roll
- 10 spring roll fried, cha gio
- 1 cucumber sliced
- mint fresh
- basil fresh
- do chua
- nuoc cham
Instructions
Cook the banh hoi noodles:
- Cook the banh hoi according to the package directions.
- Note: banh hoi does not require a long cooking time, only about 90 seconds.
- Have a large basin of ice cold water ready.
- Dunk the banh hoi noodles into the cold water to stop the cooking process, and drain well.
Assemble:
- Take the cooked banh hoi and roll into bundles and place onto the platter.
- Drizzle with shallot or green onion oil, optional.
- Arrange the roasted pork, meat(s), spring rolls, cucumber and fresh herbs.
- Add the do chua (pickled daikon & carrot) and nuoc cham (dipping sauce) into small vessels and place onto the platter/board and serve.
