Banh Hoi Platter

The Banh Hoi Platter brings together delicate woven rice noodles, roasted pork, steamed pork roll, and fried spring rolls served with fresh herbs, pickled vegetables, cucumber, and dipping sauce. The noodles have a soft, light texture and are rolled into bundles, while the meats provide savory richness. Fresh herbs and do chua add brightness and crunchy textures, and the green onion oil adds aromatic depth when drizzled.

Description

The Banh Hoi Platter centers on the traditional Vietnamese woven rice noodles called banh hoi, which cook quickly in about 90 seconds before being shocked in cold water to stop cooking and drained well. The noodles are formed into small bundles and optionally drizzled with fragrant green onion or shallot oil. Accompanying proteins include roasted pork, Chả Lụa (steamed pork roll), and fried spring rolls (cha gio), offering a variety of textures and savory flavors.

The platter is completed with fresh slices of cucumber and aromatic herbs like mint and basil, along with pickled daikon and carrot (do chua) for tangy contrast. A small vessel of nuoc cham, a classic Vietnamese dipping sauce, is served alongside to bring together the flavors with its balance of sweet, sour, salty, and umami notes.

This assembly style platter allows diners to combine elements as they wish, creating a fresh and diverse eating experience that exemplifies Vietnamese flavor balance and textural contrast.
