Ingredients

  • 1 cup granulated sugar
  • 2 tablespoons shortening
  • 1 egg
  • ¾ cup milk
  • 3 cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup mashed banana, about 2-3 bananas

Instructions

  1. Preheat oven to 350 degrees, and spray a 9x5 inch loaf pan with cooking spray.
  2. Using a hand mixer mix the sugar, shortening, and egg. When they are smooth mix in the milk.
  3. In a separate bowl whisk together the flour, baking powder, and salt.
  4. Using a spatula or spoon mix the flour mixture into the sugar mixture until just combined.
  5. Add the mashed banana to the batter and mix until just incorporated, the batter should be a little lumpy.
  6. Pour the batter into the prepared pan and bake for 50-65 minutes. A toothpick inserted should come out clean.

Notes

  • I checked my loaf at 50 minutes and ended up baking it for another 5 minutes before it was ready. Check the loaf at 50 minutes and then every 5 minutes after that.
