Basic Teriyaki Sauce 照り焼きソース
This Basic Teriyaki Sauce blends soy sauce, mirin, sake, and sugar in a simple ratio to create a balanced, mildly sweet and savory glaze. Simmered to slightly thicken, the sauce forms a glossy coating ideal for glazing grilled meats, vegetables, or tofu.
Ingredients
- 2 tbsp soy sauce
- 2 tbsp mirin
- 2 tbsp sake
- 1 tbsp sugar
Instructions
- Put all the ingredients into a small sauce pan.
- Cook over medium-high heat and stir continuously until all the sugar has dissolved.
- Turn the heat down to low and simmer for about 5 minutes to reduce to 70 % and thicken.
- Remove from heat and use on whatever dish or store in a jar/container and leave in the fridge.
Notes
- The ingredient ratio is 2:2:2:1 for soy sauce, mirin, sake, and sugar, which can be scaled up or down as needed.
- For added flavor, include a clove of garlic and about 5 grams of sliced ginger during simmering.
- Simmer to reduce to about 70% of the original volume for proper thickness without excessive sweetness.
- Store the sauce in a sealed container in the fridge and use within a reasonable time to preserve freshness.
