Basic Teriyaki Sauce combines equal parts soy sauce, mirin, and sake with half the amount of sugar to create a classic Japanese glaze. The ingredients are heated together, stirring until sugar dissolves, before gently simmering to reduce the mixture by about 30%, thickening it slightly without becoming syrupy.

This sauce delivers a harmonious balance of salty, sweet, and umami flavors. It can be used directly as a marinade, dipping sauce, or glaze. Adding optional sliced ginger and garlic enhances the aromatic profile but is not required for the basic version.

This recipe yields approximately 100 ml of sauce and is convenient to prepare ahead and store in the refrigerator for use in various dishes.

  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 2 tbsp sake
  • 1 tbsp sugar

Instructions

  1. Put all the ingredients into a small sauce pan.
  2. Cook over medium-high heat and stir continuously until all the sugar has dissolved.
  3. Turn the heat down to low and simmer for about 5 minutes to reduce to 70 % and thicken. 
  4. Remove from heat and use on whatever dish or store in a jar/container and leave in the fridge.

Notes

  • The ingredient ratio is 2:2:2:1 for soy sauce, mirin, sake, and sugar, which can be scaled up or down as needed.
  • For added flavor, include a clove of garlic and about 5 grams of sliced ginger during simmering.
  • Simmer to reduce to about 70% of the original volume for proper thickness without excessive sweetness.
  • Store the sauce in a sealed container in the fridge and use within a reasonable time to preserve freshness.
