Basil-Infused Lychee Lime Ice Pops

Ingredients

  • ⅓ c. water
  • 1 tbsp. white sugar (organic for vegan-friendly)
  • 5 large basil leaves
  • 20 oz canned lychees drained
  • juice & zest from one lime

Instructions

    Cup of Yum
  1. Combine water, sugar, and basil leaves in small saucepan. Bring to a simmer over medium heat. Remove from heat and cool to room temperature.
  2. Pour basil syrup through sieve into blender or food processor. Discard basil. Add lychees, lime juice, and zest and blend until smooth. Pour fruit mixture into popsicle molds. Freeze until solid.
