Basmati Rice with Apricots and Almonds Recipe

Aromatic basmati rice is flavored with the sweetness of almonds and apricots. The perfect side dish for a roast or grilled meats.

Ingredients

  • 1 Tbsp extra virgin olive oil Goya
  • 2 Tbsp slivered almonds
  • ¼ cup onion minced
  • 1 cup basmati rice Goya
  • 1 cup chicken broth
  • ½ cup water
  • ½ tsp kosher salt
  • 1 tsp Sazon with saffron Goya
  • ¼ tsp ground cardamom
  • ¼ cup dried apricots cut into thin strips
  • ¼ cup dates diced

Instructions

  1. In a pan heat the oil and quickly brown the almonds.
  2. Remove almonds from pan and set aside.
  3. Quickly add the onion and saute until translucent.
  4. Add the rice to the onions and turn over a few times until the rice is slightly golden.
  5. Add chicken broth, water, salt, Goya sazon, cardamom, apricots and dates.
  6. Turn down heat, cover and cook for about 15 minutes. Top with almonds.
