Bazlama (Turkish Flatbread)

Ingredients

  • 1 1/2 cups warm water 110°F
  • 2 1/2 teaspoons granulated sugar
  • 1 tablespoon olive oil plus more for cooking
  • 2 1/4 teaspoons active dry yeast
  • 4 cups all-purpose flour sifted
  • 1/2 cup Greek yogurt
  • 2 1/2 teaspoons salt

  1. In a large mixing bowl, combine warm water, sugar, oil, and yeast. Let it sit for 5 minutes until it becomes frothy.
  2. Add flour, Greek yogurt, and salt to the yeast mixture. Mix until a soft dough forms.
  3. Turn the dough onto a floured surface and knead for about 3-5 minutes until smooth.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
  5. Divide the dough into 8 equal parts. Roll each part into a ball, then flatten into a disk about 7 inches in diameter.
  6. Heat a skillet with a little olive oil over medium heat. Cook each flatbread for about 1-3 minutes on each side until golden brown and puffed up.
